-I think I need two bigger ones, no matter how hard I squeezed, I still couldn't get the big petal out (or maybe it was also because the respective paste was too hard)
Eventually some pink cabbage came out there.

As for the worms (or cornelli) it's the first time I try, and he didn't want the paste to be continuous, it kept breaking or twisting, I did it with a paper cornet because I don't have such a thin tip.

Ingredients for Lavender Naked Cake:

From the quantities given below comes a heart-shaped cake with the dimensions of 13 & # 21513 cm, enough for two portions and a birthday in two. For a larger cake, double or even triple the quantities depending on the number of servings you want

For the Genoise countertop we need: 2 eggs, 75g sugar, 75g flour, 15g melted butter, a teaspoon matcha (green tea powder), a pinch of salt ..

For soaking syrup (syrup countertops): 75g sugar, 100ml water, a teaspoon of lavender flowers, a drop of lavender essential oil, peel and juice from half a lime.

For Mousseline cream: 300 ml milk, 3 yolks, 75g sugar, 30g cornstarch, a tablespoon of lavender flowers, 100g soft butter for color we can use a teaspoon of matcha (green tea powder) and ½ teaspoon of hibiscus flower powder. For a fresh taste, add the peel and juice of half a lime.

For decoration: edible pansies from Microgreens and raw ground pistachios.

Preparation for Naked Lavender Cake:

For the preparation of the Genoise countertop: first melt the butter and leave it to cool, then mix the whole eggs with the sugar for about 15 minutes, until you no longer feel the sugar granules, then add the flour mixed with a pinch of salt and matcha (powder of sugar) to the egg yolk mixture. green tea), stirring lightly, add melted and cooled butter and mix.

Wallpaper the form with baking paper or use spray to detach from the form, pour the composition and put the form in the preheated oven at 180 ° C for about 15 minutes. Let it infuse for about 15-20 minutes, then strain and remove the lavender flowers. Separately, mix the yolks with the sugar and starch, then add the hot milk, stirring, until completely homogenous. Then put the pot on low to medium heat, stirring constantly until the skull thickens (about 3-4 minutes). Turn off the heat, cover the cream with cling film and set aside to cool. After it has cooled completely, we move on to the next stage.

Mix the soft butter and gradually add a tablespoon of boiled and cooled cream until completely incorporated.

For an extra color and for a sweet-sour taste, we proceed as follows:

Add the peel and the juice from half a lime to the resulting cream, homogenize, then divide the resulting cream into two bowls. In a bowl add a teaspoon of matcha (green tea powder), and in the other bowl add half a teaspoon of hibiscus flower powder. We homogenize both compositions and we are ready to assemble the cake.

How to assemble Naked cake with lavender:

Cut the top completely cooled into slices about 1cm thick.

We put the detachable edge of the shape in which we baked the top on the plate / plate on which we will present the cake.

Place the top slice on the inside of the detachable edge (lid) with the outside down, lightly soak with the completely cooled syrup, add 2-3 tablespoons of vernil cream with matcha, then level.

For a beautiful look, with straight edges, leave the slice at the base of the countertop for the last layer.

Then place the second slice on the counter, soak, add 2-3 tablespoons of pink cream with hibiscus, then level, and so on until done.

Finally, for a festive look, I added some edible pansies from Microgreens and a little raw ground pistachios.

If you don't have matcha and hibiscus, you can use food coloring, but be careful with it.
