This is a traditional Polish dinner - meatballs served with boiled potatoes (or smooth mashed potatoes) and lots of melted butter and fresh dill, alongside a grated carrot and leek salad. Meatballs can be made a day ahead.

- 500g beef mince
- 2 onions, chopped
- 4 cloves garlic, chopped
- 2 eggs
- 1 slice bread, soaked in water then squeezed to remove excess liquid
- salt and pepper to taste
- vegetable oil for frying
- Buttery baby potatoes
- 500g baby potatoes
- 1 teaspoon salt
- 2 teaspoons butter, melted
- 2 tablespoons fresh dill, chopped
- Carrot slaw
- 4 carrots, finely shredded or grated
- 1/3 leek, finely sliced
- 100g natural yogurt
- salt and pepper to taste

- In a bowl, combine pork and beef mince with onion, garlic, bread, eggs, salt and pepper. Mix with your hands until well combined. Roll into meatballs (3 to 4cm in diameter).
- Heat oil in a large frying pan and cook meatballs in the hot oil until browned on all sides.
- Boil potatoes in salted water until tender. Drain, pour over with melted butter and add fresh dill.
- In a separate bowl, combine shredded carrots and leeks; mix in yogurt. Add salt and pepper to taste.
Before frying, you can coat meatballs in breadcrumbs if you prefer some added crunch.

Sweets: Carrot Cake
A crowd-pleaser. This recipe by Maida Heatter produces a moist, not too sweet, cake. Great for dessert and breakfast alike. You would be greatly served using a food processor to shred the carrots if God plants you in a land with little electricity, it is likely you won’t have cream cheese either. In such circumstance, remember that you will always have cake when you come home.

2 lb / 1 kg carrots, to make 4 cups shredded, firmly packed*
1 1/2 cups or 5 1/2 oz / 156 g walnuts, broken into medium-sized pieces (roughly in quarters)
2 cups minus 2 tbsp all-purpose flour
2 tsp double-acting baking powder
1 tbsp unsweetened cocoa powder
1 cup dark brown sugar, firmly packed
A. Steam the raisins for 10 minutes. I truly believe that doing this, as well as adding more carrots than usual, contributes to the exceptional moistness of this cake.
B. Sift all the dry ingredients together into a large bowl.
C. Using a stand mixer with a whisk attachment (or a large bowl with a hand held electric mixer), beat the eggs. I find doing this for 10 minutes creates a fluffier cake. Beat in the vanilla essence, both sugars and oil and continue whisking until thoroughly mixed, remembering to scrape down the sides and the bottom of the bowl.
Add the sifted dry ingredients (B) and mix at very low speed until just incorporated
Using a spatula, fold in the raisins, carrots and walnuts (A). I find standing on a stool to make me taller or sitting on the stool with the bowl between my legs makes this a much more ergonomic task.
Butter three 9″ cake pans and line with waxed paper cut to fit.** Divide the cake batter equally between the three cake pans. Bake for 35-40 minutes until the tops just spring back when pressed gently with your fingertip.***
Take the cakes out of the oven and let them rest in their pans for 2-3 minutes. Turn out the cakes and, on a cooling rack, let them cool top side up (you will need to turn twice) with the waxed paper still on the bottom. When cool, brush off any crumbs and freeze for at least 1 hour. This will prevent them from breaking up when you frost.
16 oz / 454 g cream cheese
4 oz / 114 g unsalted or European butter
2 cups confectioners / powdered sugar
When you are ready to frost, bring the cream cheese and butter to room temperature. Using an electric whisk, beat the cream cheese and butter until smooth. On low speed, add the vanilla essence and powdered sugar and incorporate, turning up the speed to beat until smooth.
Take the frozen cakes out and, on a cake plate lined with 4 strips of waxed paper arranged in a square, place one cake bottom side up. The waxed paper strips should touch the cake all around and cover any exposed parts of the cake plate. Remove the waxed paper on the cake’s bottom. Spread a thin layer of frosting (about 2/3 cups) evenly over the cake. Gently place the second cake, also bottom side up, on top of the first layer, remove waxed paper and spread another thin layer of frosting. Repeat with the third cake until you have a three layer cake. Use the rest of the frosting to cover the sides of the cake. I find that this amount of frosting does not yield the prettiest cake, but is just the right amount of cake:frosting ratio, taste-wise. Slowly pull out the waxed paper strips from underneath the cake. Refrigerate and serve cold.
Heatter recommends decorating the top of the cake with marzipan carrots or whole walnuts. If you have the time, candied carrots ribbons or curls make a very pretty alternative – recipe here.
* Heatter suggests 1 lb carrots unpeeled to make 4 cups shredded, but I peel the carrots and always find that I need 2 lbs of carrots to make 4 cups shredded. Like Heatter, I’ve shredded carrots manually with a grater, a hand-held shredding tool, and later in life discovered the food processor. Like Heatter, I’ve found little difference in the results.
** You need to do this even if using non-stick cake pans because it will keep the cake moist in the later stages. Heatter recommends buttering and sprinkling bread crumbs over the waxed paper but I’ve never found this necessary.
*** Heatter suggests arranging the three cake pans on two racks, making sure no pan is directly above another. I solve the problem by using two ovens you may wish to do so as well if you have double ovens.
**** This is a recent addition. I find that adding lemon juice (not vanilla essence as Heatter suggests) cuts through the buttery taste of the frosting and really brings out the cream cheese.
Serve this wonderfully tender meat with flatbreads, yoghurt and a lemony slaw.
4 onions, peeled (about 500g)
3 tbsp ras el hanout
2 tsp salt
½ tsp white pepper
1 shoulder of lamb, on the bone (1.8-2kg)
For the slaw
½ tsp salt
½ white cabbage, shredded (about 350g)
Juice of 1 lemon
1 small bunch of parsley, chopped (about 15-20g)
2 tbsp vegetable oil
Seeds of 1 small pomegranate
1 Preheat the oven to 240C/475F/gas mark 9. Puree 2 onions in a food processor with the ras el hanout, salt and pepper. Slice the other 2 onions and lay them on the base of a deep roasting dish big enough to hold the lamb. Pat the pureed onion mix all over the lamb, top and bottom, and lay it on the bed of onions.
2 Put the roasting dish uncovered in the upper-middle part of the very hot oven for around 30 minutes, by which point it should have started to brown (it may take another 10 minutes if your oven doesn’t run very hot).
3 Once browned, pour in enough water to reach halfway up the lamb joint, then cover the dish. Reduce the oven to 200C/400F/gas mark 6 and roast for 1 hour. Uncover, baste with the liquid at the bottom of the dish, then re-cover and return to the oven. Reduce the heat to 180C/350F/gas mark 4 and cook for 1 hour more. Baste again, re-cover and cook for a further hour. Basting is important, as it will help to soften the lamb, so don’t skip doing this. After 3½ hours, the meat should be really soft and fall away from the bone easily.
4 To make the slaw, sprinkle the salt over the shredded cabbage, mix and allow to sit for 10‑15 minutes. Add the lemon juice, parsley and vegetable oil and mix well. Sprinkle with the pomegranate seeds.
5 Set your table with flatbread, some yoghurt, a bowl of mint leaves to cool, pickled chillies if you want some heat and some cabbage salad for crunch. Bring the lamb to the table and dish it out with a large spoon.

Meatballs with buttery baby potatoes and carrot slaw recipe - Recipes
- 8 Oz. Mushrooms
- 16 Oz. Ground Beef
- 1½ tsp Italian Seasoning
- 6 Oz. Diced Onion
- 2 tsp Minced Garlic
- ½ Cup Breadcrumbs
- 1 Egg
- Whole Wheat Spaghetti
- 24 Oz. Pasta Sauce
- Preheat oven to 400ºF.
- Grease baking sheet and set aside.
- Using food processor, add mushrooms and pulse until finely chopped. If you do not have a food processor, you can use a knife to finely chop mushrooms.
- In medium skillet over medium heat, cook mushrooms until softened and darkened in color (about 5 minutes). Set aside let cool.
- Once mushrooms have cooled, combine mushrooms, beef, Italian seasoning, onion, garlic, breadcrumbs and egg in a large bowl.
- Using your hands, shape mixture into 1 inch meatballs and place on baking sheet.
- Bake 25 minutes or until meatballs reach an internal temperature of 160ºF.
- While meatballs are baking, prepare whole wheat pasta per package directions.
- Serve pasta with meatballs and pasta sauce.
To make this a complete meal, serve with a side of steamed vegetables, fresh fruit, and a glass of low fat milk. This is the perfect way to sneak in more vegetables in one of your family's favorite dishes.

MASTER BAKING MIX
9 Cups all-purpose flour
1/3 C. baking powder
1 Tbs. salt
2 tsp. cream of tartar
4 Tbs. sugar
2 1/2 C. dry milk
2 C. shortening (which does not require refrigeration)
Sift together flour, baking powder, salt, cream of tartar and sugar three times. Add dry milk. Mix well. Cut in shortening with pastry blender or fork until mixture looks like cornmeal. Store in covered container at room temperature.
Note: To measure the Master Baking Mix, pile it lightly into a cup and level off with a table knife.
