Today I give you the recipe to prepare delicious timballini of tagliolini with porcini mushrooms, a first autumn dish that I really liked. You know that I love single portions, but if you want to do something more practical you can use a single pan and then serve by cutting into slices as for baked pasta. Those who follow me on Facebook know what happened to my recipe group, and those who know me know that on the blog I don't like to talk about unpleasant things so I will not address the subject on purpose. So I leave you to the recipe of this delicious tagliolini and I wish you a good Sunday;)

Method

How to make timballini of tagliolini with porcini mushrooms

Grease some single portion molds
Slice the mushrooms and chop the parsley.

Brown a clove of garlic in a pan with the oil, then add the mushrooms and sauté the pan for 5/6 minutes
Remove the garlic, add salt, add the parsley and remove from the heat.

Put the eggs in a bowl with salt and pepper, beat then add the cream, and finally the mushrooms.

Boil the tagliolini al dente, drain and mix them with the egg and mushroom mixture.

Fill each mold with the tagliolini.

Then thread the pieces of Asiago in the center

Cover the cheese well inside the pasta

Bake the timballini with porcini mushrooms in the oven at 180 ° C for 20 minutes.

Serve your timballini hot.


Rice timbale with mushroom heart

300 g of carnaroli rice
25 g of grated Parmesan cheese
25 g of Vallé Omega3
1 egg
3 small porcini mushrooms
a shallot
2 tablespoons of extra virgin olive oil
500 ml of bechamel (450 ml of skimmed milk - 35 g of semi-wholemeal flour - 35 g of Vallé Omega3)
salt
bread crumbs

Sara and Paolo: this is an elegant timball with a delightful surprise effect inside. However, it is extremely easy to do. It has given us great appreciation from the guests for which we have prepared it. The time has come to share it with you. Filippo: an important first course whose nutritional profile remains perfectly in line with the principles of healthy nutrition. Modest caloric intake, high satiating power, richness in mineral salts and dietary fiber are its trump cards.

Boil the rice in plenty of salted water, drain it and season it in a bowl with Vallé Omega3, Parmesan cheese and lightly beaten egg.


Timbale of macaroni

To prepare the timbale of vegetables and nuts, start by taking a pan and fill it with water. Bring the water to a boil. Wash the potatoes and boil the whole potatoes in their skins for 30-40 minutes depending on the size of the potatoes 1. Test with the prongs of the fork to check the cooking. When cooked, drain and remove the peel 2. Now leave the potatoes to cool, then mash them with the help of a potato masher and collect the puree in a bowl 3.

Then add the cheese (keep a few grams aside for the final decoration) 4. Season with salt and ground pepper and a pinch of nutmeg. Now heat the milk and when it is hot pour it into bowl 5. Then take the walnuts and set some aside for the final decoration. Chop the rest coarsely with the help of a knife and add to the mashed potatoes 6. Mix the ingredients well with a wooden ladle or a cooking spoon to make them uniform.

Now proceed with the preparation of the other vegetables. Take the pumpkin, remove the internal seeds 7 and cut it into slices that are not too large. Then remove the peel 8 and make small cubes with a thickness of about 5 mm 9.

Then take an onion, remove the outer skin and divide it in half. Placing the flat part on a cutting board, cut it to obtain small cubes 10. Keep aside. Then take the leek, remove the final part and the green leaves and cut it and small pieces 11. Then take a pan, pour the l & rsquoolio slowly and let the leek and onion pass through 12. With the help of a spatula or a wooden ladle, mix the mince so that a uniform cooking takes place.

Now add the diced pumpkin 13. Extend with a ladle of hot water to make the pumpkin pass 14. Then season with salt and pepper and continue mixing the ingredients. Let it cook for 10 minutes until the pumpkin becomes tender.

Then move on to preparing the cabbage. Using a small knife, cut around the central part by removing the leaves. Remove the stem and make small florets of the same size to allow even cooking 16. Then take another pan from the edges. Fill it with water and bring to a boil then add salt. Boil the cabbage florets for 4-5 minutes 17. When the florets are ready, pour them into the pan with the pumpkin 18 with the help of a slotted spoon. Cook the vegetables together for another 5 minutes and mix them to mix the ingredients well.

At this point, take the mushrooms and scratch the stem. If the mushroom is lightly soiled with earth, it can be cleaned with a damp cloth, if there is a lot of earth, it must be washed in cold, strong running water to rinse the impurities and dry it with absorbent paper or a clean cloth (if you want a detail on how to do it you can consult the sheet on mushroom cleaning). Cut the mushrooms lengthwise and then into not too small pieces 19. Now take a pan with high sides. Pour in a drizzle of oil and crush a clove of garlic (or put it whole and remove it when it has browned) 20. Add the mushrooms 21 and cook over high heat for about 10 minutes.

Add the parsley 22 to the mushrooms and season with salt. Stir occasionally and, if necessary, add a ladle of the cooking water from the cabbage to allow even cooking. Then take a pan with a diameter of 25 cm. Grease it with a brush and sprinkle with breadcrumbs 23. Pour in the potato mixture 24.

Then make the mashed potatoes adhere well to the edges of the pan by pressing with the back of a spoon 25. Then pour inside the pumpkin and cabbage mixture 26 and then the mushrooms 27. Level the mixture well with the back of the wooden spoon to allow for even cooking in the oven.

Decorate the surface of the timbale evenly with the walnut kernels kept aside 28 and grated cheese 29. Bake in a preheated static oven at 200 ° C for 20 minutes (if you have an oven in ventilated mode at 180 ° C for 10 minutes). Once cooked, take it out of the oven and let it rest for about 15 minutes before serving and the timbale of vegetables and nuts is now ready to savor 30!


TIMBALLINI OF TORTELLINI

Ingredients for 4 people.

  • 400 gr. of tortellini (boiled or cooked in broth)
  • 20 cl. of béchamel ready
  • 50 gr. of mixed hard cheeses
  • 1 tablespoon of parsley
  • 10 gr. of butter
  • 1 pinch of grated nutmeg
  • salt

Grate the cheeses, mix them together, put them in a large bowl, then add the béchamel, parsley, a pinch of salt and one of grated nutmeg. Turn the tortellini into the mixture and mix gently, being careful not to break the wrappers of dough, divide the tortellini into 4 buttered dome molds and put them in the oven at 200 ° for about 10 minutes until a golden crust has formed on the surface. Turn the molds over onto the individual plates, gently lift the molds and serve.
