Rice and beans is a typical one peasant recipe, a substantial and nutritious dish. It is a very simple dish to make and prepared with simple ingredients such as rice, beans and tomatoes which, when flavored with garlic and basil, become a cheap and healthy winter soup. The rice with beans it is a dish that accompanied me during my childhood but that I did not begin to appreciate only in adulthood, I had to eat legumes because "they were good" but I certainly would never have chosen them of my own free will for my lunch. Elisa, unlike me, has always loved them, and when we travel, they are my lifesaving food par excellence, while the other children eat the ham sandwich, she prefers to eat a jar of boiled beans (but peas also go well), go and figure it out;) Well girls today I take it easy, I'm still in bed and I don't know yet what turn to take my day, for this Saturday I don't mind a bit of rest, we'll read tomorrow, a kiss and good weekend to whoever passes by here: *
How to make rice and beans
Wash the tomatoes, remove the seeds and cut them into cubes.
In a high-sided pot, season a clove of garlic in a little oil.
Add the tomatoes and basil and cook for about 7-8 minutes.
Rinse and drain the beans, then add them to the sauce and leave to flavor for a few minutes.
Pour the rice into the sauce, add salt and stir to mix.
Now add the hot broth until everything is covered.
Pepper and remember to mix often with a wooden spoon and, if the rice dries up, add a ladle of broth at a time.
When cooked, bring to the table and serve your rice with beans with a sprinkling of black pepper.
