Method
How to make pasta with asparagus and pancetta
Clean the asparagus (go to the guide to clean the asparagus) then boil them for 5 minutes in salted water
Then drain and cut into small pieces
In a large pan, sauté the chopped onion with a drizzle of oil
Add the asparagus and cook for about 5 minutes
Lift half of the asparagus, the biggest stalks, put them in a mixer, add the grated parmesan, a drizzle of extra virgin olive oil and blend everything until you get a cream
Add the diced bacon to the pan and fry for about 5 minutes then season with salt and pepper
Cook the pasta in abundant salted water, drain it al dente and pour it into the pan with the sauce
Add the asparagus cream and sauté the pasta in the pan for a minute
