The mini raspberry charlotte are a spoon dessert made with ladyfingers gluten free Schär and stuffed with a double lemon and raspberry mousse. The dessert is very sweet but it is also super delicious, forgive me for the pun;) Beautiful to look at and excellent to taste, these mini charlotte with raspberries are perfect to serve as a dessert at the end of a meal, bringing to the table something good but light in taste.

How to make raspberry mini charlotte

Put the egg yolks and sugar in a glass bowl. Cook in a bain-marie, whipping the mixture with an electric mixer until the mixture is light and fluffy.

Add the lemon juice and the squeezed isinglass that you have previously softened in water.
Continue to whip adding the potato starch. Once you have a smooth and homogeneous cream, remove the bowl from the bain-marie and let it cool.

Meanwhile, in a separate bowl, whip the cold cream from the fridge. Once the cream has cooled, add it to the cream and mix it gently with a wooden spoon.

Now divide the mousse obtained in two bowls.
Blend the raspberries and add them to one of the two bowls and mix.

Go now to assemble the mini charlotte. Moisten the ladyfingers with rum and cut each of them in two halves.

On a surface covered with parchment paper, arrange the ladyfingers in a circle inside a ring.
With a pastry bag filled half with raspberry mousse and half with white mousse.

Then put in the refrigerator to harden for an hour. Now remove the rings and close the mini charlotte with a ribbon.

Add some raspberries to decorate and serve.
