The crepes with cheese and nuts they are a rich and tasty first course that you cannot miss. Perfect for special occasions, these crepes can also be served during a lunch with vegetarian guests. All you will need to make this dish are crepes, which you can also make the day before and cheeses of your choice, in my case 4: gorgonzola, fontina, scamorza and parmesan: P

How to make cheese and nut crepes

We prepare the crepes
Beat the eggs in a bowl. Put the flour in a bowl and add the milk slowly and mix until you get a batter. Then add the beaten eggs and mix until you get a smooth and homogeneous batter. Cover the bowl and let the dough rest for 30 minutes.
Then pour a ladle of dough into a buttered crepiere and spread all the dough on the surface of the pan.
Cook one minute on each side, then turn the crepes when they are golden and put them on a flat plate one on top of the other.
Prepare the béchamel by making a roux of flour and butter then add the hot milk and mix until you get a smooth cream, then add salt and add the nutmeg.

Put half of the béchamel in a bowl and add the cream, grated parmesan, gorgonzola and fontina.
Mix to obtain the 4 cheese cream.

Dice the smoked cheese and coarsely chop the walnuts.

Stuff each crepe with chopped walnuts and diced scamorza, then add a couple of spoonfuls of cheese cream. Close the crepes into wallets and place them gradually in a pan lined with béchamel.

Once all the crepes have been completed, cover them with the bechamel, chopped walnuts and a sprinkling of grated Parmesan cheese.

Bake Cheese and Walnut Crepes in a preheated oven at 180 ° for about 20 minutes or until their surface is golden brown.

Once ready, let them cool a few minutes before serving.
