How to make anchovy meatballs

Remove the tails from the anchovies, then cut them coarsely with a knife.

Put them in a bowl together with the crumbled breadcrumbs, egg, pecorino cheese, freeze-dried garlic, chopped parsley, salt and pepper.

Knead until you get a homogeneous mixture.

With the mixture obtained, with moistened hands, form meatballs of about 5 cm in diameter.
Dip the meatballs in the breadcrumbs, then place them on a cutting board and let them harden in the fridge for 30 minutes.

Heat the oil in a pan and fry the meatballs.

Once golden, lift them with a slotted spoon and let them dry on a plate lined with absorbent paper.

Serve the anchovy meatballs hot.
