    Preheat the grill or barbecue.

    Place the strips of red pepper and summer squash on the grill and cook for 2-3 minutes per side, until grill marks appear.

    Place four slices of whole grain bread on the grill on indirect heat. Top each with slices of red pepper and summer squash, and then a 1/2 cup of arugula. Place a slice of mozzarella cheese on top of each. Place the remaining four slices of bread on the grill as well.

    Cover and cook for 3-4 minutes. Close the sandwiches, press down and remove from the grill.

This grilled vegetable recipe is DELICIOUS and such a great way to enjoy the summer’s bounty. A few of my other favorite grilled veggie recipes are Grilled Portobello Mushroom Burgers, Honey Balsamic Grilled Chicken and Vegetables, and Grilled Rainbow Peppers with Cream Cheese.

How If you prefer to grill them indoors, you can also grill the vegetables on a grill pan, then preheat to oven to 350°F, make your vegetable stacks on a baking sheet and melt the cheese in the oven. The vegetables can also be grilled a day ahead and reheated in the oven as well.


Veggie Mozzarella Pesto Grilled Cheese Sandwich

I’m a huge fan of a good grilled cheese sandwich and according to my family, I make a pretty mean one. Just don’t tell my girls everything that I use in my recipe! I love experimenting with different ingredients to use with my Udi’s ® Gluten Free Delicious Soft White Sandwich Bread. On the top of the list is my Veggie Mozzarella Pesto Grilled Cheese Sandwich that I have been making almost as long as I’ve known my husband. And that’s a LONG time! 18 years to be exact. It’s been a favorite of ours since our dating years, especially during these cooler weather months. Just add a delicious cup of your favorite soup and you are all set to enjoy some comfort food.

I mean look at this deliciousness filled with crunchy veggies, melted mozzarella cheese, tangy pesto sauce, and our favorite gluten free bread from Udi’s. The possibilities are endless, but I think it’s pretty perfect the way it is right now.

Ingredients

  • Udi’s Gluten Free Delicious Soft White or Multigrain Sandwich Bread (I used white)
  • 2 slices of mozzarella cheese
  • A sprinkle of parmesan cheese
  • A handful of alfalfa sprouts
  • A tablespoon of pesto sauce
  • A handful of shredded carrots
  • Butter (for grilling)
  • Favorite soup recipe

Instructions

  • Spread butter on both sides of your sliced bread.
  • Lay one slice on a pan on the stove on medium heat. You want the stove warm enough to toast the bread and low enough to melt the cheese. So keep an eye on it.
  • Add a slice of mozzarella, a sprinkle of parmesan cheese, drizzle pesto sauce, add a handful of alfalfa sprouts, a handful of carrots, and finish off with another slice of mozzarella.
  • Add the second slice of bread.
  • Grill on both sides until mozzarella is melted and both sides of the bread are grilled.

Creating this recipe brings back so many memories of my hubby and me during the beginning of our relationship so many years ago. They say the way to a man’s heart is with food, and whoever said that was so right. It just took the perfect sandwich recipe and he was hooked. The best part is that now he is able to eat his favorite grilled cheese recipe on Udi’s Gluten Free Delicious Bread without worrying about his gluten allergy or our daughter’s nut allergy.

Grilled Cheese Tips

  • You can spread butter on the inside of the bread to help the bread from drying out
  • Try spreading the bread with mayo and putting a little bit of butter in the pan right before cooking. The best of both worlds.
  • Put a little bit of shredded cheddar cheese in the pan with some butter and place the grilled cheese on it for a crispy cheese crust.
  • Patience. Grilled cheese should not be rushed, it burns so easily. It’s a very fast meal, to begin with. Take your time and watch it closely. You will be rewarded.
  • Grating The Cheese – Grating your cheese helps it melt more evenly.
  • Cover The Pan – If the cheese hasn’t completely melted but, your bread is almost golden brown, cover the pan briefly to help the cheese melt.

This recipe is a good starting point, I wouldn't follow it word for word. I didn't use eggplant or peppers, just zucchini and a tomato. I didn't grill the tomato though. I also substituted the balsamic vinaigrette for the vinegar, added more flavor to the veggies. I thought it was pretty good.

This is ok. But I could wing something tastier without a simple recipe like this one.

This recipe needs work - I found the EVOO + Balsamic vinegar mix didn't give the veggies enough flavor. I used EVOO, salt/pepper and rosemary which was far more tasteful! Also added sun-dried tomato pesto on the bread.

Eh. Meh. Could have used more spices and "jazzing up", which you can certainly do, but shouldn't the recipe stand on it's own? Healthy yes, but no culinary revelation or taste revolution.

I would say that this recipe is good, not great. I was kinda blah to be honest. It's really healthy which is nice and makes a good lunch to take to work but really nothing to rave about.

Really tasty and filling. Added portebellas and sun dried tomatoes. Wrapped up and kept great for lunch the next day.

The Ultimate Grilled Veggie Sandwich is a great vegetarian option that is healthy, filling and delicious. Trust me even meat lovers will love this sandwich!!

I absolutely love a giant pile of grilled vegetables – fresh and seasonal veggies from the market or homegrown. Veggies make me happy and are always welcome in my kitchen.

In my absolute dream world, I have a big ginormous garden with all sorts of vegetables, herbs and flowers. From the humble and plentiful zucchini to the most exotic mushrooms – all things living in perfect harmony.

Unfortunately, I don’t have the greenest thumb or all the patience that gardening requires. But a girl can dream! Maybe one day, a not so distant day, in a galaxy not far away….

Now the hubs on the other hand…. he has a green thumb. He used to plant and care for our garden and grew some amazing vegetables. *Hint *hint hubs, perhaps it is time to start a garden again! – not sure he reads my blog but a wife can try to send messages this way.

Back to the grilled vegetables…. I love marinating my vegetables for a few minutes – they don’t need a lot of time. What I usually do is mix some extra virgin olive oil with some balsamic vinegar, salt and ground black pepper. Sometimes I also add grated or minced garlic and chopped rosemary. The added flavor is magical, it really adds a subtle but wonderful flavor to the veggies.

For The Ultimate Grilled Veggie Sandwich with Fresh Mozzarella and Basil Aioli you can choose whatever vegetables you like. For example, if you are not fond of mushrooms don’t use them. Simple! Just grill vegetables that you like.

You can use an outside grill or a grill pan. Both work and provide wonderful results. I mostly use my grill pan because I love grilling all year round. There’s something about grilled things…. the flavor, the grill marks. It’s perfection!

The Basil aioli is very easy to make. A few ingredients and a blender or food processor is all you need for incredibly flavorful results! The aioli is also perfect as a dip or to be served with grilled meats.


Grilled Veggie Sandwich w/Pesto & Mozarella (gluten-free option, contains dairy)

The key to this delicious sandwich is some freshly made pesto, ciabatta bread, and some grilled veggies. And since fresh pesto is always a staple in my kitchen, we end up making this grilled veggie sandwich all the time! I posted a small comment about this sandwich in my pesto recipe awhile back, but thought it deserved an actual post since it’s a favorite amongst my family. I’ve even made this sandwich one day ahead of time, packed it in some saran wrap and foil, and had it for lunch the next day.

For my brother who has Celiac Disease, I made this sandwich open faced on his favorite gluten-free bread and he loved it.

GRILLED VEGGIE SANDWICH w/PESTO & MOZARELLA: (gluten-free option, contains dairy)

4 sandwich size ciabatta bread (or you can purchase a loaf and slice it)
4 slices mozarella cheese
1/2 red bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1/2 red onion, thinly sliced
1 medium zucchini, thinly sliced to the shape of thin rectangles
1 medium yellow squash, thinly sliced to the shape of thin rectangles
2 roma tomatoes, thinly sliced
fresh baby spinach leaves, washed and dried
pesto (recipe)
balsamic vinegar
salt/pepper

(Note: All the veggies are optional depending on what you have. My husband prefers this sandwich with only zucchini and yellow squash, but I enjoy it with all the veggies.)

Ingredients

  • ½ medium red bell pepper stem and seeds removed and discarded, cut into four pieces
  • 1 medium Portobello mushroom cut into ½-inch slices
  • ½ medium onion cut into ½-inch slices
  • 1 medium zucchini sliced diagonally into ¼-inch slices
  • 1 medium summer squash sliced diagonally into ¼-inch slices
  • 2 tsp. olive oil divided use
  • 4 (8-inch) whole wheat tortillas
  • 4 tsp. prepared pesto sauce
  • 4 Tbsp. mozzarella cheese (2 oz.)
  • 4 Tbsp. soft goat cheese (2 oz.)
