2/3 cup boiling water
1/2 cup cold water
2 tbsp. sugar
1 8 oz. softened low-fat cream cheese
1/4 cup skimmed milk
2 9 oz. low-fat thawed cool whip,

  • Put raspberry jello in a large bowl and add boiling water. Stir until dissolved. Now stir in cold water. Cover this bowl with plastic wrap and refrigerate it for a half hour.
  • Meanwhile, beat sugar and cream cheese until smooth and fluffy. Beat in milk & mix one container of cool whip.
  • Now, remove jello mixture from refrigerator and blend it in the remaining container of the cool whip until completely smooth.
  • In a glass bowl, pour half of the raspberry jello mixture. Top with the cream cheese, cool whip mixture and remaining raspberry jello mixture.
  • Refrigerate it for about an hour until set and garnish it with raspberries.


2 cups flour
1 tablespoon sugar
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
3 large separated eggs
1/4 cup unsalted melted butter
1 1/2 cups rinsed and sorted blueberries
Oil, clarified butter or nonstick cooking spray

  • Sift flour, sugar, baking soda and salt into large bowl.
  • In separate bowl, beat buttermilk, egg yolks and melted butter until blend well. In a separate bowl beat egg whites until soft peaks form.
  • Mix buttermilk mixture into flour mixture until just blended. Add blueberries.
  • Beat egg whites in separate bowl and carefully fold it into the above mixture.
  • Now, heat large nonstick griddle over medium heat until hot enough to sizzle a drop of water. Brush the nonstick griddle with thin film of oil.
  • For each pancake, pour 1/4 cup of batter onto griddle. Regulate heat to medium-low and cook until tops are covered with small bubbles and edges appear to be setting for about 2 minutes.
  • Turn the pancake and cook until it turn golden brown on other side for another 2 minutes.
  • Repeat ther process with remaining batter to make pancake.


6 egg whites
1 egg yolk
1 teaspoon fresh thyme or oregano or chives
1 minced scallion
Salt and freshly ground pepper to taste
1 ounce pepper jack cheese

  • In a large bowl beat the egg whites and the yolk. Add all the herbs and scallion, and season with salt and pepper.
  • Heat the nonstick pan to medium, and pour in the eggs. With the help of a wooden spoon move them around, make sure to scrape the bottom to prevent them from sticking.
  • When the eggs begin to come together, sprinkle cheese on it, and cook till they reach the desired doneness. Enjoy.

Then…you realize you haven’t thought about what you’re going to eat on Mom’s special morning, and you’re trying to convince yourself that pizza and coffee would make a decent meal.

This is my family’s favorite go-to recipe, and they really are as crispy and fluffy as promised. The best part: they can be made up to a week ahead, which means you can get way ahead of the game if you’re planning a Mother’s Day brunch. Just make sure they don’t mysteriously disappear before May 13.

This is a nighttime switch-up: sausage, kale and mushrooms provide just the right savory combo, and the sweet potatoes balance the flavors perfectly. (If Mom is a kale-hater, there are plenty of substitutions in the recipe that would still make an awesome casserole.) This will become your new go-to casserole for brunch — and hey, just in time to start planning that Father’s Day meal!

Make the champagne vinaigrette (her recipe is a great one to keep on hand) and gather all of the ingredients the night before and then assemble and toss together in the morning. Your mom will thank you for a recipe that she (or you!) can use all year long.

Mother’s Day is known in the restaurant business as one of — if not the — busiest days of the year.

Stats from the National Restaurant Association support that notion. Research from the NRA (this is the other NRA, mind you), show that more than a quarter of American adults will celebrate Mother’s Day in a restaurant, with one in 10 relying on take-out to splurge on mom.

Dinner is by far the most popular meal, attracting 55 percent of those dining out. But brunch is not insignificant, attracting 30 percent of Mother’s Day diners.

It certainly doesn’t feel insignificant at Biltmore Village’s Corner Kitchen, where the restaurant expects to serve hundreds of hungry moms and their family.

“We flirt with 500 diners,” said Joe Scully, who owns that restaurant and Chestnut with his business partner Kevin Westmoreland.

The menu at the Corner Kitchen, which trends toward Southern-tinged classics with a seasonal and local bent, will be slimmed down a touch.

“We’ll have just a few less choices because it will be so busy, so folks can actually get fed,” he explained. At press time, there were still a few tables left, but not many.

Scully credits the light and airy nature of the recently renovated restaurant for its huge pull on mothers. “The Corner Kitchen to me is the ultimate Mother’s Day location, because it’s so bright, well-lit and homey,” he said. “But if mom is a sophisticated lady, take her to Chestnut.”

The Chestnut crew is still trying to decide the final Mother’s Day menu, though it will be something “feminine” — and every mother will receive a rose.

Westmoreland’s mother will receive a special seat at Corner Kitchen. But Scully said he lost his own mother in 1997. But in a sense, he said, his mother would be with him during Mother’s Day.

“My daughter Genevieve Scully, who works as a hostess at Chestnut, was born one month before my mom passed away,” he said. “And Genevieve looks just like her.”

Whether you should cook for mom or take her out is generally something a reporter might not want to ask a restaurateur, Scully advised. But he did note that cooking for mom is a nice touch.

In fact, he said, it’s always nice to do for mom what you’re best at — whether that’s making crafts or cooking a multicourse meal. Should you wish to try the latter, the Biltmore Estate has provided a few recipes. (And should you prefer to take mom to the Biltmore Estate instead, see the Mother’s Day box at right.)

“Mom’s been cooking for us forever,” he said, noting that, of course, there are some moms who mostly teach their kids how to make reservations — not that there’s anything wrong with that. “But that wasn’t my mom,” he said.

It wasn’t Meherwan Irani’s mother either. The chef and owner of Chai Pani, which has two locations, and MG Road, was raised in a small rural town called Ahmednagar, in Maharashtra State, India.

“Growing up, all Indian moms and housewives cooked every day,” he said. “Often three meals a day. It was the single most important responsibility of the woman of the house, and learning how to cook was something that was actively passed down from mother to daughter as training for married life.”

In that sense, Irani said, his mom’s cooking was almost a vocation.

“And with that comes generations of practice, skill, tips and tricks, cool shortcuts, and the ability to make do with whatever is at hand,” he said. “There’s a certain economy of motion, a practiced ease and a intuitive sense of how to correct a dish by taste, smell, (and) how to substitute when you don’t have what you need.”

That woman’s intuition in the kitchen is one of the most important spices in Indian cooking, and one Irani brought into Chai Pani when it first opened when he brought his mother in from India to help train the kitchen staff.

“So when my mom came here to help train our first cooks, one of the things that was really integral to our food was that we got to see how an Indian housewife ‘thinks’ about food and cooking,” he said.

Even though many miles separate Irani and his mother, he still makes sure to always find a way to thank her on Mother’s Day.

“Being a mother has got to be one of the greatest sacrifices we as humans make,” he said. “It truly represents putting aside your personal needs, dreams, aspirations, for the love of your children. So to have a chance once a year to acknowledge and honor that love and sacrifice is the best thing about Mother’s Day for me.”

Scully also has expert words of wisdom for people whose parents are still with them. “You should love your mom every day,” he said. “Call your mother.”


1 bottle Biltmore Estate® Blanc de Blancs

3 ounces fresh squeezed lime juice

Combine vodka, simple syrup and lime juice over ice and mix well. Once chilled, strain into champagne flutes, filling them 2/3. Top off with Blanc de Blancs, and garnish with raspberries and mint.

Boil water, add sugar, and simmer three minutes until sugar dissolves. Cool completely.

12 ounces thin asparagus cut into one inch pieces

1 cup chopped green onions, white and green parts

1 cup ricotta, drained well

½ cup shredded Pecorino Romano

Preheat broiler to high heat. Crack eggs into a medium bowl, and beat well, adding salt, pepper and nutmeg, and reserve. Melt butter in a 10 inch nonstick skillet set over medium heat. Add asparagus and cook for about two minutes as asparagus turns bright green. Add green onions, cooking for about ten seconds, and then add eggs. Using a spoon, add the ricotta in dollops, mixing into eggs but leaving some clumps. Using a rubber spatula, lift the sides of the frittata, occasionally allowing uncooked eggs to run down to bottom of the skillet. Top with Pecorino Romano, and set under broiler until top is fully cooked and light golden.

Cut into pie shaped wedges and serve with fruit or salad.

*For best flavor, get eggs from a local source.

4 tablespoons melted butter

Mix dry ingredients in medium bowl. In separate bowl, beat eggs and then add buttermilk and butter. Add wet mix to the dry mix, and stir until combined, but not over-mixed. Heat electric griddle to 350 degrees or heat skillet on stove over medium heat. Spray cooking area with pan spray, and add desired amount of batter. Sprinkle in blueberries. When bubbles appear, flip the pancake and cook an additional one minute, or until second side is golden. Hold loosely covered with foil in a 225 degree oven until ready to serve if necessary.
